Last weekend, I went to DASSAI Store Ginza after lunch.
"Dassai" is the premier brand sake produced by Asahi Shuzo Co., Ltd.
Besides several kinds of sake, you can enjoy "Dassai" sweets there.
I had a Yen500 "Kikizake set" to sample three kinds of sake, DASSAI 50, DASSAI 39 and DASSAI 23.
Do you know the meaning of 50, 39 and 23?
They refer to the percentage of the rice grains left after milling.
The outer surface of rice is milled to remover proteins,
fats and minerals that cause undesiralbe flavors in the sake.
The more the rice grain has been shaved off, the higher the quality of the sake will be.
Thus DASSAI 23 is the highest grade of all sake.
I really enjoy its gorgeous aroma and elegant long finish.
